Cheddar Jalapeño Soup
A smooth and cheesy soup with bits of jalapeño that give it just the right amount of heat. Just add water and milk or add chicken and corn for flavorful southwest chicken chowder.
You will need:
2 1/2 cups water
2 1/2 cups milk
In a large saucepan over medium heat, whisk together ingredients; bring to a boil, stirring constantly.
Reduce heat and simmer uncovered for 10 minutes, stirring often to prevent sticking.
Cheddar Jalapeno Mac & Cheese
2 ½ Cups Milk
1 ½ Cups Water
1 Cup of Cheese (Pepper Jack or White Cheddar Cheese work well)
1 lb. Cooked Noodles
Prepare soup as directed. Remove soup from stove and add cheese and stir till melted. Add noodle and place in 13×9 baking dish.
Bake at 350 for 15-20 min.
Options: Add a breadcrumb topping or extra chopped jalapenos.
